I'm having a blue Monday. It's one of those days.
On to the menu for this week.
Monday : Chicken alfredo, garlic bread & salad
Tuesday : Meatloaf, mashed potatoes, veggies
Wednesday : Same as Monday
Thursday : Same as Tuesday
Friday : Something from the freezer (I'm enjoying eating down freezer food)
Breakfasts : Lemon blueberry pancakes, bran apple muffins, omelets, cereal, fresh fruit. Pick your own breakfast
Lunch : Baked chicken or frikkadel from the freezer & salad.
I went to the produce market on Friday, so we're fully stocked on fruit & veggies. I was so happy to see colored peppers for 99c/lb (I should've taken a pic of what I bought). I love peppers (especially red peppers) and paid $1.69/lb last time I was at the market. I didn't buy a box, because they only had boxes of potatoes. I didn't need that much.
FYI - I'd fix a different meal every day if there were more of us. Since it's just DS & myself, we eat the same food twice per week to avoid food waste.
Today I'm going to wash & dice all the peppers (I didn't get a chance over the weekend) and make some fresh pico and maybe guac (I bought avocados too).
I didn't make dessert this week, because that apple pie made me gain weight. Oy vey. I got another 8 lb bag of apples, so I'm gonna make applesauce instead. Mine tastes like apple pie filling, so I'm going to enjoy 'guilt free' applesauce.
Happy Gooey hearts day for tomorrow.
Have a wonderful day peeps!
No fun having the blues. Hope your spark comes back soon.ReplyDelete
I have everything to make Chicken Alfredo too and plan to have it one night this week. It isn't a favorite of the big guys but he'll be OK. Sometimes I get to choose, right?
It's just the two of us also so if there are left overs I either remake them into something else or we eat them for our lunches.
Have a great week!!
Thank you Lori! Day started out rough, got rougher, but I'm doing better now. I'm just handling things as they come my way.Delete
I love your reasoning...lol. Of course, you should get a choice from time to time :) Hope you enjoy the Alfredo. I also eat leftovers for lunch when I'm too lazy to fix a salad. You too have a wonderful week!
Your menu sounds really good. I've never had frikkadel, but I looked up a recipe & it sounds amazing!ReplyDelete
Thank you HP! Frikkadel is so good. I'm planning on making more tomorrow :) It's my new 'staple'. I hope you enjoy it!Delete
Sorry about your blue Monday. We all have them.ReplyDelete
Aww, thank you Kim! I bought jumbo chocolate muffins at Sams to make myself feel better. You are never far from my thoughts my friend. Sending you a great big hug!Delete
Hope you get all the produce processed. I don't have as much here, but I need to get it ready for the week.ReplyDelete
Thank you Anne. I'll just start my music playlist and it will be easy work. Hope you get everything done too. Have a great week!Delete
Colored peppers for 99 cents is right up me alley! Your dinners sound good as do the blueberry lemon pancakes. My daughter and I will eat the same thing until it is gone and I need to cook again. It does save on food waste.ReplyDelete
Thank you Belinda! The pancakes are so good. Walmart brand pancake mix. We top it with more fruit (banana, kiwi, strawberry), butter, syrup and cinnamon. I too, will eat things until it's gone. DS will only eat leftovers twice and then he wants something new.Delete
Wish you were closer to share the peppers with. I just found 18ct eggs for $4.38 at Walmart. I was so happy, cause it's over $6 everywhere else.
I do hope your day got better. Blue days kind of creep up on one. Your menu sounds great and kind of like how I do things as well. Using things up is very important.ReplyDelete
Thank you Jackie! You inspired me to use things up.Delete
Send hugs for that blue day. (long past now but in case you have another one.)ReplyDelete
