Menu Plan Monday 02/27/23

Happy Monday everyone! Time for another menu plan. I didn't do much cooking yesterday, because we're keeping things somewhat simple by eating from the freezer. What's for dinner this week?

Monday : Slow cooker steaks with onions, peppers & gravy, mashed potatoes, veggies

Tuesday : Chicken stir fry with rice

Wednesday : Same as Monday

Thursday : Same as Tuesday

Friday : Mexican or Italian sausage from the freezer

Lunch : Leftovers or BWW chicken tenders from freezer with salad

Breakfasts : Gingerbread muffins, breakfast burritos, omelets, cereal, fresh fruit

There's always lots of fresh fruit, veggies & salad fixings available. 

I made a pot of refried beans on Friday, pulled fajita chicken from the freezer, added pico I made earlier in the week and had chicken nachos for dinner. Easy peasy. Now if I can just wean DS off Friday night fast food. 

The chicken stir fry didn't happen last week. I made a huge batch of frikkadel for the freezer (it never made it's way to the freezer, cause I eat it every day), so I figured we'd just have it for dinner 2 nights too. I added mashed potatoes, baked beans & carrots to that. No use cooking another meal when we already have food available. So it's on this week's menu. 

I don't know if it's just me, but I don't care much for the instant pot's slow cooker feature. I've tried it on both my old instant pot and the new foodi one and it just doesn't wow me like an actual slow cooker does. I'm added a new a new pot to my needs list. It makes really good pulled chicken too. I might just have to make pulled chicken next week. Something to think about.

It's cold & wet here today. Perfect weather for comfort food. It makes me want to bake something too, like bread or cupcakes. Maybe I should just take a nap instead. I've been wide awake since 2 am and I'm already dragging. It's times like these that I'm glad dinner's already cooked. I just need to make the mashed potatoes later.

  1. Your meals all sound delicious! I don't use an Instant Pot so I can't help you there. Sounds like you have the perfect weather to go take a nap. It's in the 60's here but SO windy. Have a great week!!

  2. I figure as long as everyone is fed and happy, it does not matter how close to plans the meals are. Now I want some of the gingerbread muffins! They sound delicious!

    1. I like your way of thinking Anne. I cook/bake all our meals for the week on Sundays. I just turn on some good music & get to work. That way I don't have to think about food for the rest of the week. You have to try those muffins (I posted the recipe 2 weeks ago). It's one of our favorites.

  3. It's cold & rainy here as well. We're in a stage where we need multiple dinner options (Sam has club soccer, and won't be home until close to bed time). So, we'll have stuff prepped & ready to go, and he can just warm it up when he gets back.

    1. I heard about your poor weather HP. Hope you all stay safe & warm. I'm sure Sam is very happy to just have to heat & eat. Makes life so much easier to have everything prepared in advance.

  4. Your meals sound good! I had to google frikkadel, would you share your recipe sometime? We love meatballs, but I'm guessing you may use different spices.
    I agree with you, I don't like the slow cooker feature on my instant pot, and I'm not crazy about the rice feature. I had hoped to do away with some appliances, but think I will keep my crock pot and rice cooker.

    1. Thank you Kathy! I'm happy to hear that I'm not the only one who doesn't like the instant pot slow cooker. I haven't tried it for rice yet. I still cook rice the old school way (stovetop). I love my instant pot though, so I'll just add a slow cooker.

      Here's the frikkadel recipe Kathy. We use a simplified recipe. The parsley already adds flavor. Hope you enjoy it.

  5. We use up leftover meals in the same manner. Anything left after two meals we try and eat for lunches.

    1. I used to hate eating leftovers when I was younger. Now it means less food waste, no extra cooking & money saved. I'll never dislike leftovers again...lol.
