Menu Plan Monday 1/23/23

Hi everyone

I would like to ask everyone to please keep Kim, Hilogene & Sam in your prayers. These ladies have all lost their husbands unexpectedly. I'm praying for comfort & strength for them & their families. All the loss makes one realise just how fragile life is. So show those you love how much you appreciate them. Hug them a little tighter and tell them you love them every single day. 

I slept late yesterday (which threw me off, cause I'm an early bird), but I still managed to get our weekly cooking done.

Monday : Chicken curry & rice with beetroot salad and some veggies on the side

Tuesday : Chicken roll with side salad and/or veggies

Wednesday : Same as Monday

Thursday : Same as Tuesday

Friday : Nachos or burritos with fajita chicken from the freezer. I'll just make fresh beans and pico

There's always a variety of veggies available. I cook Indian curry so my curry contains potatoes & peas.

Breakfasts : Carrot pineapple muffins, bagels with cream cheese, eggs, cereal and there's a variety of veggies available for omelets. Lots of fresh fruit available too. 

Lunch : Usually dinner leftovers or chicken salad (with baked chicken from the freezer)

I need to run some errands. I have a full plate for today.

  3. I'm so saddened by all of this loss.

    Your menu plan sounds delicious. I forgot to get ground beef this weekend, so I'm winging it a bit, but have a few other meals ready to go. If nothing else, we'll be eating up more leftovers than planned, which is always a good thing.

      Thank you! Leftovers is good, especially if it means you don't have to cook. I keep forgetting to tell you that I've had chocolate cake on my mind since you mentioned it at Thanksgiving....lol. I'm gonna have to bake one soon to satisfy my craving.

  4. Your menu sounds delicious! I LOVE Indian curry, well actually Indian food in general. I want to make Samosas this weekend as I've been craving them for awhile. Hope you have a great day!!

    1. Thank you Lori! You can make samosas?! I'm impressed!!! I tried making samosas before and my leaves/shell flopped. I too, love Indian food, cause I grew up on it. I can eat Indian & Mexican food every single day.
